North Carolina Restaurant Features Duck as Gluten-Free

RALEIGH, NC (March 30, 2010) -- Restaurant SAVOY in North Raleigh, NC, has added 20 gluten-free items to its lunch, Sunday brunch and dinner menus for those who may have gluten allergies or celiac disease.
Two of the highlighted menu items feature Maple Leaf Farms duck: Duck Confit with truffled honey and apple cardamom chutney (appetizer) and Pan-Roasted Maple Leaf Farms Duck with rosemary scented sweet potato, Vidalia onion hash and Banyuls cherry glaze (entree). According to a SAVOY news release, gluten is the protein found in wheat, rye, and barley. Simple gluten intolerance can be uncomfortable, but manageable. However, a more serious intolerance is celiac disease. "With gluten intolerances becoming more common, we want to have menu items that all of our customers can enjoy," says Pete Gibson, SAVOY's executive chef. |
