Duck with Fruited Rice

Raisins and dried apricots make this entrée perfect for months when fresh fruit isn't in season.

1 Maple Leaf Farms Whole Duck, defrosted and quartered

1 Tbsp. Cooking Oil

1 medium Onion, cut into 8 wedges

3 1/2 cups Water

1 1/2 tsp. Salt

1 cup Rice

1 cup Dried Apricot Halves

1 cup Golden Raisins

2 tsp. Sugar

1 tsp. Cinnamon

1/2 tsp. Poultry Seasoning

1/8 tsp. Pepper

1. Take duck from bag and remove neck giblets. Rinse under cool water; drain and dry. Cut duck into quarters.

2. Brown quarters on both sides in hot oil. Add onion, 1 cup water and 1 1/2 tsp. salt. Cover; cook slowly at 325°F for 45 minutes, turning once.

3. Remove duck from pan. Skim off excess fat. Add rice, apricot halves, raisins, sugar, cinnamon, poultry seasoning, pepper and remaining salt; stir. If not much liquid remains, add up to 1/2 cup water.

4. Place duck quarters on rice. Cover; bring to a boil. Cook slowly until rice and duck are tender, about 30 minutes.
