Champagne Peach Sauce for Duck

1 Can (20 1/2 Ounces) Cling Peach Slices

1/2 Cup Champagne

1/3 Cups Brown Sugar

1/2 Teaspoon Mace

1. Drain peaches. Puree in blender. Add champagne, very carefully. Replace lid on blender and give puree button one quick on/off spin to combine wine and peaches.

2. Transfer to a small sauce pan. Add brown sugar and mace and stir until completely blended over high heat. Bring to a boil. Reduce heat and simmer for 10 minutes (longer if desired to be thicker).

3. Serve hot on the side with roast duck to preserve skin crispness.
