Maple Leaf Farms Duck Center of Inaugural Menu

WASHINGTON, D.C. (January 20, 2009) -- Maple Leaf Farms duck will be the center of a three-course meal served to President Obama and members of Congress immediately after the swearing-in ceremony on January 20.  100 pounds of duck breast will be shipped to Washington to be prepared for the meal, according to the Fort Wayne Journal Gazette.
 
Maple Leaf Farms of Milford produces the best duck in the U.S., said Kathy Valentine, chief executive officer of Design Cuisine, a Virginia-based caterer who won the contract to prepare the meal. "It's the only duck we use." Design Cuisine is a top-flight caterer in Washington DC and created the menu, which “draws on historic ties to the Presidency of Abraham Lincoln.”
 
After the president takes the oath of office and delivers his Inaugural address and following the departure ceremony for the outgoing President, the traditional Inaugural Luncheon will take place. About 200 people (Obama, Vice President Joe Biden, members of their families, the Supreme Court, Cabinet designees and members of congressional leadership) will attend the event in Statuary Hall in the Capitol Building.
 
The main course, the Joint Congressional Committee on Inaugural Ceremonies announced Friday, is "a brace of American birds (pheasant and duck), served with sour cherry chutney and molasses sweet potatoes."  The meal will start with seafood stew, and dessert is apple cinnamon sponge cake and sweet cream glace.
