BBQ Duck Burgers on Rosemary Focaccia

Ingredients


Duck Burger


2 lb 4 oz Maple Leaf Farms Boneless Leg & Thighs, finely chop or grind meat


3 Tablespoons Bread Crumbs


2 Tablespoons Each Dijon Mustard, Minced Raw Onion


2 Tablespoons Chopped Parsley


1 Teaspoon Each Minced Garlic, Black Pepper, Sea Salt


Rosemary Sour Cream Butter


4 Ounces Unsalted Butter, softened


1/4 Cup Sour Cream


1 Tablespoon Each Lemon Juice, Brown Sugar


2 Teaspoons Dijon Mustard


1 1/2 Teaspoon Grated Lemon Zest


1 Teaspoon Finely Chopped Fresh Rosemary


1/2 Teaspoon Salt


Dash Hot Sauce


3 Tablespoons Finely Chopped Fresh Parsley


Red Cider Slaw:


1 1/2 Tablespoons Lite Mayonnaise


1 1/2 Teaspoons Sugar


1 Tablespoon Cider Vinegar


1/4 Teaspoon Each Salt, White Pepper


2 Teaspoons Minced Fresh Parsley


1 1/2 Cups Shredded Red Cabbage


1/3 Cup Coarsely Grated Seedless Cucumbers, squeezed dry


2 Tablespoons Coarsely Grated Carrots


2 Tablespoons Minced Red Bell Peppers


6 Rosemary Focaccia Buns, 5-6" diameter

Duck Burger: 1. Combine burger ingredients. Divide into 6 oz portions; shape into 1/2 " thick and 4" diameter patties. Refrigerate covered for a minimum of 1 hour.


Rosemary Sour Cream Butter: 2. Place all butter ingredients except parsley into food processor. Blend until smooth. Remove from processor; blend in parsley. Reserve one-half of butter mixture for brushing burgers and the other half for buttering foccacia.


Red Cider Slaw: 3. Combine first six Red Cider Slaw ingredients. Before servicing, blend in remaining ingredients.


4. Preheat grill. Place patties on hot grill. Turn when bottom side is marked; brush with butter mixture. Continue to turn and brush with butter mixture about 5-7 minutes or until desired doneness has been reached.


5. Cut focaccia buns in half; toast. Brush top and inside with butter mixture. Place duck burger on bottom half of bread; top with Red Cider Slaw or serve slaw on the side. Add top half of bread.


Note: Maple Leaf Farms Ground Duck Meat may also be used.
