Pumpkin Seed Sauce


1/2 Pound Lard

4 Cups Pumpkin Seeds, raw and unshelled

5 Pounds Tomatoes, pared and seeded

8 Ounce Garlic Clove, pared and minced

1 Quart Chicken Stock

Melt lard in a large saute pan over moderately high heat. Add seeds and saute until all pop and are light brown, taking care not to burn them. Combine seeds with tomatoes, garlic and chicken stock in a blender until smooth. Pour mixture into a large sauce pan; simmer gently for 10 minutes.
