Duck Pitas with Country Apples and Cabbage

4 Pita Loaves

1/4 cup Apple Jelly

As Needed Non-Stick Cooking Spray

2 Maple Leaf Farms Boneless Duck Breasts, skin removed

3/4 cup Chopped Onion

2 Garlic Cloves, finely minced

3 cups Shredded Cabbage

1 1/4 cups Cubed Apple

1 Tbsp. Low Sodium Soy Sauce

1/4 tsp. Crushed Red Pepper

2 tsp. Sesame Seeds

1. Cut pita in half and spread jelly inside of each pocket half.

2. Spray both sides of duck with cooking spray to coat completely and cut into thin strips. Spray large skillet with cooking spray. Heat skillet over medium high heat; add duck, onion and garlic; cook 3-4 minutes or until lightly browned. Stir in cabbage; cook an additional 3 minutes. Add apple, soy sauce and pepper. Cook 2-3 minutes or until heated through.

3. Spoon equal portions of duck mixture into prepared pita halves. Top with sesame seeds and serve with fresh fruit, if desired.
