Pineapple Sauce with Fruits

This recipe creates a glaze and sauce to serve with duck

1 can (8 1/2 oz.) Sliced Pineapple

1/2 cup Pineapple Preserves

1 tsp. Grated Lemon Peel

1 tsp. Grated Orange Peel

2 Tbsp. Butter

3-4 Firm Bananas, cut into chunks

1 Orange, peeled and sliced

1. Drain pineapple slices; save syrup.

2. Combine pineapple syrup, preserves, lemon and orange peel; simmer for 2 minutes. Save 1/3 cup of mixture for glazing duck.

3. Add butter to remaining sauce. Arrange banana chunks, pineapple slices, orange slices in shallow 1 1/2 quart casserole; pour sauce over fruits. Bake in slow oven 325° until bananas are hot about 15 minutes.

4. Use reserved glaze to baste duck during last 15 minutes of roasting. Serve fruit sauce with duck; makes 3-4 servings.
