Grilled Sweet Potato & Onion Packets

Ingredients


4 medium Sweet Potatoes, peeled, sliced 1/4 inch thick


1 large Vidalia or Other Sweet Onion, thinly sliced


2 tablespoons Canola or Vegetable Oil


1 teaspoon Salt


Heavy Aluminum Foil


1/2 cup Butter, softened


2 tablespoons Brown Sugar


1/8 teaspoon Nutmeg


1/2 cup Chopped Salted Macadamia Nuts, toasted

1. Prepare charcoal or gas grill. Combine sweet potatoes and onion rings in a large bowl. Add oil and salt; toss until vegetables are lightly coated with oil.


2. Tear four sheets of heavy aluminum foil to measure 16 x 12 inches each. Spoon half of vegetables over center of one sheet of foil; top with another sheet of foil, folding and crimping edges all around sides of foil to form a packet. Repeat with remaining vegetables forming another packet. Place packets on grid of barbecue grill. Grill covered over medium coals (or bake in a 375-degree oven) for 30 to 35 minutes or until sweet potatoes are fork-tender.


3. Meanwhile, combine butter, brown sugar and nutmeg; mix well. Add nuts; mix well. Transfer vegetables to serving plates; top with butter mixture.
