Duck Panini with Gorgonzola Cream

2 Cups Shredded Maple Leaf Farms Duck Leg Confit Meat

4 Panini Rolls, 4 oz each

4 oz Gorgonzola Cheese, at room temperature

4 oz Heavy Cream

4 oz Anjou Pear, peeled, roasted, sliced

1/2 Cup Caramelized Onion, sliced

1. Cut very thin slices of crust off top of rolls. Slice rolls lengthwise. Discard tops of rolls.

2. Combine cheese and cream. Stir until mixture is smooth. Evenly spread gorgonzola cream on each side of cut rolls.

3. On bottom side of roll, place shredded duck. Cover edges of roll.

4. Divide pear slices evenly over duck. Top each with onions and remaining bread.

5. Heat a lightly oiled grill top. Place sandwiches on grill top. Weigh sandwiches down and cook 5 minutes. Flip sandwiches and weigh down, cooling 10 minutes more.

6. Serve as an individual lunch portion. Can also be cut into 6 finger sandwiches for hors d'oeuvre.
