Duck Breakfast Pizza

Make pizza into a breakfast item with this hearty, kid-friendly dish. This recipe works great with a variety of duck products.

5 slices Maple Leaf Farms Duck Bacon*

4- 6" Prepared Pizza Crusts

1 1/2 cups Shredded Cheddar Cheese

1 Red Pepper, roasted and coarsely chopped

1 cup Green Pepper, coarsely chopped and sautéed

1 cup Mushrooms, coarsely chopped and sautéed

1 cup White Onion, coarsely chopped and sautéed

4 Eggs

2 Green Onions, 1/4" diagonal slice

1. Preheat oven to 400°F. Cook duck bacon according to package directions and chop into 1-inch pieces. Set aside.

2. Sprinkle 3/4 cup cheese on crusts. Top each crust with red peppers, green peppers, mushrooms, white onions and duck bacon.

3. Make a small well in the center of each pizza and crack one egg in each.

4. Sprinkle with the rest of the cheddar cheese.

5. Place on sheet pan and bake for 8-10 minutes, until egg is cooked to sunny side up.

6. Sprinkle with green onions and serve immediately.

*Note: Other Maple Leaf Farms products may be used for the duck bacon: Ground Duck Sausage, Roast Half Duck, Rotisserie Roast Half, Duck Breasts or Pulled Duck Meat.
