Smoked Duck on Baguette

4 Tablespoon Butter

1 Cup Finely Chopped Fresh Mushrooms

1 Cup Finely Chopped Onion

2 Cloves Garlic, minced

12 Ounces Artichoke Hearts, drained and finely chopped

1 Cup Parmesan Cheese, grated

4 Tablespoons Mayonnaise

1 Teaspoon Dijon Mustard

To Taste Coarsely Ground Black Pepper

3 Baguettes

1 1/4 Lbs Maple Leaf Farms Smoked Duck Breast, sliced

12 Ounces Brie Cheese, sliced

1. Saute mushrooms, onion and garlic in butter over medium heat until vegetables are tender. Remove from heat.

2. Stir artichoke hearts, Parmesan cheese, mayonnaise, and mustard into vegetables. Season to taste. Mix well. Set aside.

3. Cut baguettes in half. Spread with artichoke dressing.

4. Arrange 2 ounces brie and 3 ounces smoked duck breast slices on each sandwich. Garnish with your favorite greens.
