Sweet Onion Marmalade

Excellent with smoked duck or grilled duck

3 Tablespoons Butter

2 Large Sweet Onions, thinly sliced

2 Tablespoons Sugar

3 Tablespoons Raspberry Preserves

2 Tablespoons Raspberry Vinegar

2/3 Cup Dry Red Wine

To Taste Salt & Pepper

Melt butter and saute onions over medium heat for 30 minutes uncovered. Add sugar, preserves, vinegar, and wine. Cook 20 minutes or until marmalade consistency is reached. Season with salt and pepper.
