Tequila Lime Sauce

Serving Size {4 Servings}


1 Tablespoon Oil

1 Tablespoon Shallots

2 Ounces White Wine

1 Ounce Tequila

1 Ounce Glace de Canard

1/4 to 1/2 Lime, juiced, zest blanched & reserved

4 Ounces Heavy Whipping Cream

1 Teaspoon "Mashed" Green Peppercorns, (Madagascar)

1 Teaspoon Chopped Fresh Cilantro

1 Teaspoon Chopped Fresh Parsley

As Needed Salt and Pepper

Heat oil over medium low heat. Add shallots and sweat. Add white wine and tequila. Deglaze the pan and reduce by 2/3. Add duck glace, lime juice, heavy cream and peppercorns. Reduce to desired consistency. Add cilantro and parsley, stirring, and adjust seasoning with salt and pepper.
