Duck Frittata

Ingredients


14 Ounces Eggs


2 Ounces Milk


1/4 Teaspoon Salt


1/8 Teaspoon White Pepper


4 Ounces Red Pepper, cooked and diced


3 Ounces Asparagus, blanched and sliced


6 Ounces Maple Leaf Farms Boneless, Skinless Duck Breast, julienne


1 Ounce Parmesan, grated


As Needed Cantaloupe, sliced


As Needed Honeydew Melon, sliced


As Needed Raspberries

Share this recipe

1. Combine eggs, milk, and seasonings. Pour into greased 10" pie pan. Spoon vegetables and duck over egg mixture; sprinkle with cheese.


2. Bake until firm and golden brown at 400 degrees for 20-25 minutes. Let rest for about 10 minutes before cutting. Cut into 6 wedges, place 1 wedge on each plate and garnish with fruit.
