2 Croissants, split

1 Cup French Toast Batter

2 Maple Leaf Farms Smoked Duck Breast

4 Eggs

2 Tablespoons Butter

1/2 Cup Pure Maple Syrup

1/2 Cup Maple Roasted Pecans

2 Tablespoon Maple Syrup Butter


1 Cup Pecans

1 Tablespoon Pure Maple Syrup


1 Tablespoon Pure Maple Syrup

1/4 Pound Butter, softened to room temperature

MAPLE SYRUP BUTTER: 1. In a mixer, blender or food processor, mix syrup and butter, whipping until light and fluffy.

MAPLE ROASTED PECANS: 2. In a small bowl combine pecans with syrup. Mix with your hands until all are coated with syrup. Place on greased cookie sheet presentation side up, and bake at 250° until syrup dries; about 20-30 minutes. Remove from oven and transfer to wax paper before they cool. Allow to cool completely before using.

3. Dip croissants in French toast batter and fry on greased griddle or skillet until golden brown and heated through. Keep warm for service.

4. Slice duck breast thinly on a diagonal. Sauté in 1 tablespoon butter gently until hot. Scramble eggs in 1 tablespoon butter.

5. Place 1 croissant on each plate open face. Fan the duck breast slices over the eggs. Pour some of the maple syrup over all. Sprinkle with Maple roasted pecans. Pipe about 1 tablespoon of butter in center of fanned out duck breast slices. Serve with extra syrup on the side.
