Ingredients
- ¾ Cup Panko
- 1 ½ Cup Flour
- 4 Large Eggs
- ½ Cup Oil
- 2 Tbsp. sugar
- 1/2 Tbsp. Baking Powder
- 1/4 tsp. Kosher Salt
- ¾ Cup Milk
- ½ Tbsp. Vanilla Extract
- 4 Tbsp. Butter, Melted
- 1 Jalapeno, Chopped (Optional)
- ¼ Cup Maple Syrup
- Parsley for Garnish
Direction
- Preheat oven to 400 degrees F.
- Remove the skin from duck breast then season with salt and pepper on both sides. Cover with plastic and use meat tenderizer to flatten duck breast.
- Whisk 2 eggs in a bowl then put ½ cup of flour and panko breadcrumbs in separate bowls.
- Dip and coat each duck breast into flour, egg, then panko.
- In a pan on meidum-high heat, fry the duck breast for 3-4 minutes per side.
- Place fried duck breasts on a pan and bake for 10 minutes at 400 degrees.
- Preheat waffle iron. Mix sugar, remaining flour, baking powder, and salt in a bowl.
- In a separate bowl, whisk together 2 eggs, milk, melted butter, jalapeno, and vanilla extract.
- Slowly pour wet ingredients over dry ingredients and mix.
- Pour batter in waffle iron and cook according to waffle iron instructions or for 5 minutes.
- To serve: Place duck breast over waffles and drizzle maple syrup on top. Garnish with parsley.
