Duck a ’la Orange Sandwich

Savor the classic French flavors of our Duck à l’Orange in a convenient, crave-worthy sandwich. Tender, juicy meat from our roast half duck is shredded and layered with a zesty orange glaze, crisp greens, and a hint of fresh herbs, all nestled between a toasted roll. You can make this sandwich in about 45 minutes.

Ingredients

  • 1Roast Half Duck,Defrosted
  • ¼ cup Mayonnaise
  • 2 tbsp. Fresh Orange Juice
  • 1 tsp Orange Zest
  • 1 tsp Dijon Mustard
  • 1 tsp. Champagne Vinegar
  • ½ tsp. Salt
  • ½ tsp Pepper
  • 2 Stalks Celery,Finely Diced
  • 1 Shallot,Finely Diced
  • 1 Small Bunch Chives,Chopped
  • 4 Large Croissants
  • ½ cup Arugula

Direction

  • Preheat oven to 375°F. Place roast half duck in shallow baking pan. Bake for 20 minutes.
  • Shred and chop roast half duck into bite size pieces.
  • Whisk together mayo, orange juice, orange zest, Dijon, vinegar, salt, and pepper.
  • In a large bowl, mix duck, celery, shallot, chives, and dressing.
  • Chill for 20 minutes.
  • Slice croissants in half. Add arugula to bottom of the sandwich and top with duck a la ’orange mixture. Serve immediately.
