Ingredients
- 1Roast Half Duck,Defrosted
- ¼ cup Mayonnaise
- 2 tbsp. Fresh Orange Juice
- 1 tsp Orange Zest
- 1 tsp Dijon Mustard
- 1 tsp. Champagne Vinegar
- ½ tsp. Salt
- ½ tsp Pepper
- 2 Stalks Celery,Finely Diced
- 1 Shallot,Finely Diced
- 1 Small Bunch Chives,Chopped
- 4 Large Croissants
- ½ cup Arugula
Direction
- Preheat oven to 375°F. Place roast half duck in shallow baking pan. Bake for 20 minutes.
- Shred and chop roast half duck into bite size pieces.
- Whisk together mayo, orange juice, orange zest, Dijon, vinegar, salt, and pepper.
- In a large bowl, mix duck, celery, shallot, chives, and dressing.
- Chill for 20 minutes.
- Slice croissants in half. Add arugula to bottom of the sandwich and top with duck a la ’orange mixture. Serve immediately.
