Ingredients
- 1/2 cupDuck Fat,Defrosted
- 3 lbs. Potatoes,Peeled and Chopped
- 1/2 cup Heavy Cream
- 1/2 cup Grated Parmesan
- 2 tsp. Salt
- 1 tsp. Pepper
- 6 Cloves Garlic,Minced
- 1 Small Bunch Fresh Thyme,Leaves Stripped
Direction
- Add potatoes to large stock pot and cover with water. Heat to boiling and cook for 18 minutes.
- Melt duck fat in microwave.
- Mash potatoes with a potato masher. Mash in melted duck fat, heavy cream, Parmesan, salt, pepper, and garlic.
- Blend with immersion blender for a creamier potato.
- Mix in fresh thyme and serve.
