Duck Fat Garlic Mashed Potatoes

These rich, garlic-infused potatoes can be served with a variety of main dishes. You can make these mouthwatering mashed potatoes in about 30 minutes.

Ingredients

  • 1/2 cupDuck Fat,Defrosted
  • 3 lbs. Potatoes,Peeled and Chopped
  • 1/2 cup Heavy Cream
  • 1/2 cup Grated Parmesan
  • 2 tsp. Salt
  • 1 tsp. Pepper
  • 6 Cloves Garlic,Minced
  • 1 Small Bunch Fresh Thyme,Leaves Stripped

Direction

  • Add potatoes to large stock pot and cover with water. Heat to boiling and cook for 18 minutes.
  • Melt duck fat in microwave.
  • Mash potatoes with a potato masher. Mash in melted duck fat, heavy cream, Parmesan, salt, pepper, and garlic.
  • Blend with immersion blender for a creamier potato.
  • Mix in fresh thyme and serve.
