Ingredients
Cajun Seasoning:
- 1 Whole Duck , Defrosted
- Peanut Oil as Needed for Fryer
- 25 Large Bay Leaves,Crushed
- 3 tbsp. Creole Seasoning
- 3 1/2 tsp. Dried Thyme
- 3 1/2 tsp. Dried Oregano
- 2 tsp. Garlic Powder
Direction
- Prepare fryer by adding oil (peanut is preferred) to the full line. Heat oil to 350°F and maintain temperature while frying.
- Remove duck from packaging. Remove neck, giblets, and orange sauce packet (if included). Pat dry. Remove excess fat.Optional: Inject marinade of choice.
- Mix Cajun seasoning together and rub inside and outside duck.
- Load duck into fryer basket. Slowly lower duck into heated oil and cover.
- Fry for 3 minutes per pound plus 5 minutes, until internal temperature at leg joint reaches 180°F.
- Carefully remove duck from fryer and let rest for 5 to 10 minutes.
- Carve duck and serve.
