Duck Stuffed Dates

Create a quick and easy appetizer for your guests this holiday season with Duck Stuffed Dates! Bacon-wrapped and stuffed with a Ground Duck blend and goat cheese crumbles, these dates will have your friends and family coming back for seconds.

Ingredients

  • 2 Tbsp Ancho Chili Powder
  • 1 Tbsp Cumin
  • 1 Tbsp Smoked Paprika
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1/2 tsp dried Thyme
  • 24 Dates, Pitted
  • ¼ Cup Panko
  • 4 Oz. Goat Cheese Crumbles
  • 12 Thick Slices Of Bacon (Cut In Half Lengthwise)
  • 3 Tbsp. Honey
  • 1 Tbsp. Red Wine Vinegar
  • 1 tsp Fresh Thyme
  • 1 tsp Fresh Rosemary
  • 1/2 tsp Salt, divided

Direction

  • Preheat oven to 400 degrees F.
  • Combine Ground Duck , ancho chili powder, cumin, paprika, garlic powder, onion powder, dried thyme, and 1/4 tsp salt to create a chorizo spiced duck sausage
  • In the food processor, pulse together duck sausage, panko, and goat cheese until it forms into a crumble.
  • Stuff each date with sausage mix then wrap each date in half slice of bacon and secure with a toothpick.
  • Whisk together honey, red wine vinegar, rosemary, ¼ tsp. salt, and fresh thyme to make a glaze.
  • Bake dates for 15 minutes in the oven. Remove from oven and brush with glaze then bake for 10 more minutes or until bacon is golden brown.
