Ingredients
- 12 Oz. Ground Duck
- 2 Tbsp Ancho Chili Powder
- 1 Tbsp Cumin
- 1 Tbsp Smoked Paprika
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 1/2 tsp dried Thyme
- 24 Dates, Pitted
- ¼ Cup Panko
- 4 Oz. Goat Cheese Crumbles
- 12 Thick Slices Of Bacon (Cut In Half Lengthwise)
- 3 Tbsp. Honey
- 1 Tbsp. Red Wine Vinegar
- 1 tsp Fresh Thyme
- 1 tsp Fresh Rosemary
- 1/2 tsp Salt, divided
Direction
- Preheat oven to 400 degrees F.
- Combine Ground Duck , ancho chili powder, cumin, paprika, garlic powder, onion powder, dried thyme, and 1/4 tsp salt to create a chorizo spiced duck sausage
- In the food processor, pulse together duck sausage, panko, and goat cheese until it forms into a crumble.
- Stuff each date with sausage mix then wrap each date in half slice of bacon and secure with a toothpick.
- Whisk together honey, red wine vinegar, rosemary, ¼ tsp. salt, and fresh thyme to make a glaze.
- Bake dates for 15 minutes in the oven. Remove from oven and brush with glaze then bake for 10 more minutes or until bacon is golden brown.
