Duck Stuffed Mini Peppers

Ingredients

  • 1 Roast Half Duck, Defrosted
  • 4 oz. light Cream Cheese, softened
  • 4 oz. light sour cream
  • ½ cup fat free Shredded Cheddar Cheese
  • 1 bunch green onions, thinly sliced
  • 10 mini peppers
  • 1 tbsp. olive oil

Direction

  • Preheat oven to 375 degrees and bake Roast Half Duck for 15-20 minutes.
  • Finely shred roast half duck. Save ¼ cup back for topping.
  • Mix remaining roast half duck with cream cheese, sour cream, cheddar cheese and green onions.
  • Slice mini peppers in half and remove the seeds and membranes. Brush them lightly with olive oil.
  • Stuff peppers with duck and cheese mixture. Top with remaining roast half duck.
  • Bake at 400 for 10-15 minutes.
