Ingredients
- 1 Roast Half Duck, Defrosted
- 4 oz. light Cream Cheese, softened
- 4 oz. light sour cream
- ½ cup fat free Shredded Cheddar Cheese
- 1 bunch green onions, thinly sliced
- 10 mini peppers
- 1 tbsp. olive oil
Direction
- Preheat oven to 375 degrees and bake Roast Half Duck for 15-20 minutes.
- Finely shred roast half duck. Save ¼ cup back for topping.
- Mix remaining roast half duck with cream cheese, sour cream, cheddar cheese and green onions.
- Slice mini peppers in half and remove the seeds and membranes. Brush them lightly with olive oil.
- Stuff peppers with duck and cheese mixture. Top with remaining roast half duck.
- Bake at 400 for 10-15 minutes.
