Tucker’s Deep Fried Duck

The Tucker family's take on frying a whole duck! This recipe has a delicious Cajun rub on the outside, and crispy skin thanks to the deep fryer - it's perfect for your next holiday gathering.

Ingredients

Cajun Seasoning:

  • Peanut Oil as Needed for Fryer
  • 25 Large Bay Leaves,Crushed
  • 3 tbsp. Creole Seasoning
  • 3 1/2 tsp. Dried Thyme
  • 3 1/2 tsp. Dried Oregano
  • 2 tsp. Garlic Powder

Direction

  • Prepare fryer by adding oil (peanut is preferred) to the full line. Heat oil to 350°F and maintain temperature while frying.
  • Remove duck from packaging. Remove neck, giblets, and orange sauce packet (if included). Pat dry. Remove excess fat.Optional: Inject marinade of choice.
  • Mix Cajun seasoning together and rub inside and outside duck.
  • Load duck into fryer basket. Slowly lower duck into heated oil and cover.
  • Fry for 3 minutes per pound plus 5 minutes, until internal temperature at leg joint reaches 180°F.
  • Carefully remove duck from fryer and let rest for 5 to 10 minutes.
  • Carve duck and serve.
