What’s the Difference Between Popular Duck Breeds?

White Pekin Duck

White Pekin ducks are the primary breed for duck meat in the U.S., making up about 95% of consumption. Raised for about 4–6 weeks, Pekin ducks provide tender meat that’s easy to prepare, whether you’re a novice or experienced cook.

Muscovy Duck

The Muscovy duck accounts for about 3–4% of duck consumption in the U.S., though it is more popular in parts of Europe. Muscovy ducks are known for their gamey taste and are often raised for foie gras and breast meat. They require a longer growth period—around 11 weeks. The flavor that may be less appealing to those looking for a milder option as the taste is much stronger and less adaptable to other dishes.

Moulard Duck

A unique crossbreed, the Moulard duck is a blend of a male Muscovy and a female Pekin duck. Like the Muscovy, Moulard ducks have a gamey flavor and are primarily raised for foie gras production rather than for everyday cooking.
