Ingredients
- 2 tbsp. Duck Fat
- 1 lb. Carrots
- 1 tsp. Salt
- 1 tsp. Pepper
- 1 tsp. Garlic Powder
- 1 tsp. Dried Thyme Leaves
- 4 oz. Goat Cheese
- 2 tbsp. Heavy Cream
- 1 tbsp. Olive Oil
- 1 tbsp. Lemon Juice
- Drizzle of Honey
Direction
- Preheat the air fryer to 400 degrees.
- Trim carrots. Keep whole or cut in half if too large for air fryer. Toss carrots with duck fat.
- Mix salt, pepper, garlic powder, and thyme. Mix into carrots.
- Place duck fat carrots in air fryer and cook for 10-15 minutes, flipping half way through.
- While carrots cook, blend goat cheese, cream, olive oil, and lemon juice in food processor to create whipped goat cheese.
- Spread whipped goat cheese on a serving plate, top with carrots. Drizzle with honey and serve.
