Ingredients
- 1.5- 2 Lbs. Ground Duck
- 4 Tbsp Panko Breadcrumbs
- 1 Tbsp Raw Onion, Minced
- 1 tsp Garlic, Minced
- Coarsely Ground Salt and Pepper, to Taste
- 1 Sweet Onion, Thinly Sliced
- ½ tsp. Salt
- 1 Tbsp. Butter
- 2 Tbsp. BBQ Sauce
- 4 Hamburgers Buns (Preferably Ciabatta or Onion)
- 4 Slices of Cheddar Cheese
- 4 Slices of Bacon
- Arugula for Garnish
Direction
- Preheat grill to medium high heat.
- In a pan on the stove top on medium high heat add sweet onion slices, ½ tsp. salt, and butter. Let onions caramelize for 25-30 minutes, stirring occasionally and bringing the temperature down as needed.
- Mix Ground Duck , bread crumbs, onion, and garlic in a bowl and let sit 10 minutes.
- Form 4 patties from mixture and generously coat with salt and pepper.
- Add patties to the grill and cook for 5-7 minutes on each side or until internal temperature reaches 165 degrees F. In the last few minutes, add on cheddar slices to melt.
- Cut bacon slices in half and cook in a frying pan or on the grill. (Watch carefully for flare ups.)
- Cut buns in half and toast on the grill.
- Place burgers on buns and top with BBQ sauce, caramelized onions, bacon slices, garnish with arugula then serve.
