Ingredients
- 1 Whole Duck , Defrosted
- 1 Tbsp. Salt
- 1 Tbsp. Paprika
- ½ Tbsp. Chili Powder
- ½ Tbsp. Cumin
- 1 Tbsp. Pepper
Direction
- Preheat your fire or grill to medium-high heat. Add a grill plate if you are using an open fire.
- Remove whole duck from bag. Discard giblets. Remove the backbone by cutting up both sides of the duck’s backbone with poultry shearers.
- Combine salt, paprika, cumin, chili powder, and pepper. Sprinkle on all over the duck inside and outside. Press to adhere.
- Lay the duck on the grill grate skin side down and cook for 20 minutes, rotating every 5 minutes.
- Flip and let cook for 25 more minutes or until internal temperature at the leg joint is 180 degrees F.
- Let rest for 5-10 minutes. Carve and serve.
