Ingredients
- 4 Slices Duck Bacon
- 4 Cloves Garlic, Minced
- 8 slices Provolone Cheese
- 2 Tbsp Dijon
- 3/4 Cup Spinach
- 4-8 Metal Skewers
Direction
- Preheat your fire and grill to medium high heat.
- Place duck bacon over the fire and cook for 1-2 minutes per side.
- Remove the skin from each duck breast. Flatten each duck breast with a meat tenderizer.
- Brush Dijon mustard over each duck breast. Top with garlic, spinach, then provolone slices.
- Place a slice of duck bacon on each duck breast then roll up duck breast and secure with 2 metal skewers.
- Place the rollups on the grill with the rollup seal side up and meat side down. Grill for 7 minutes, flip and grill for 3 more minutes. Ensure duck reaches 165 degrees F temperature.
- Let rest for 3 minutes then serve.
