Ingredients
- 3 tbspDuck Fat,Defrosted
- 1 lb. Small Carrots
- 1 tsp Salt
- ½ tsp Pepper
- 1 tsp Paprika
- ¼ cup Grated Parmesan
- 1 tbsp. Honey
- 1 tbsp. Fresh Thyme for Garnish
Direction
- Preheat oven to 415°F. Peel and slice carrots in half. Cut into three-inch pieces.
- Melt duck fat. Mix in salt, pepper, and paprika. Spread 2 tbsp. of mixture evenly on a nonstick baking sheet. Reserve remaining mixture in a bowl.
- On baking sheet, mix Parmesan into duck fat mixture until paste forms.
- Place carrots flat side down on sheet and brush top side with remaining duck fat mixture.
- Bake in oven for 20 minutes. Drizzle honey over carrots, garnish with thyme and serve.
