Ingredients
- 1 Tbsp Duck Fat
- 2 carrots, chopped into sticks
- 2 Bell Small Peppers, thinly sliced
- 1/4 cup zoodles (zucchini noodles)
- 2 cups cooked Quinoa or Brown Rice
- 1/4 cup Scallions, thinly sliced
Direction
- Preheat oven to 425 degrees F and melt Duck Fat in a sheet pan while preheating.
- Place carrot sticks and bell pepper slices on preheated pan and mix to coat with Duck Fat. Add salt and pepper if desired. Roast for 20 minutes in the oven.
- While veggies are in the oven, cook Duck Breast according to packaging directions or with our online Duck Breast Cooking Instructions .
- Once veggies are cool, thinly slice Duck Breast and start to assemble your grain bowl: Grain on the bottom, scallions, carrots, peppers and Duck Breast fanned out around the sides of the bowl. Place zoodles in the center & enjoy. Add a dressing on top for extra flavor!
