Ingredients
- 1 Yellow Onion
- 2 tbsp. Ginger
- 6 Cloves Garlic
- 1 Bunch Cilantro, Finely Chopped
- 2 Jalapenos
- 2 tsp Cumin
- 1 tsp Coriander
- 1 tsp Chili Powder
- 2 tsp. Sumac
- Harissa for Garnish
- 4 Kebab Skewers
- 12 oz. Ground Duck
Direction
- In a food processor, finely chop onion, ginger, garlic, cilantro, and jalapenos.
- In a bowl, mix spice and onion mixture with ground duck. Mix in cumin, coriander, chili powder, and sumac.
- Split mixture evenly into four balls. Take each duck ball and form it around the kebab. Let firm in the fridge for 30 minutes.
- Grill on medium heat for 2 minutes on each side of until the meat thermometer reads 165 degrees.
- Top with harissa for garnish.
