Duck Kofta

Enjoy a Duck Kofta with our ground duck. First, you take our ground duck and mix it with onion, ginger, garlic, cilantro, cumin, coriander, chili powder, sumac and jalapenos. Then you'll split the mixture and form it around the kebabs. Finally, grill it on each side for 2 minutes (meat thermometer reads 165 degrees) and enjoy!

Ingredients

  • 1 Yellow Onion
  • 2 tbsp. Ginger
  • 6 Cloves Garlic
  • 1 Bunch Cilantro, Finely Chopped
  • 2 Jalapenos
  • 2 tsp Cumin
  • 1 tsp Coriander
  • 1 tsp Chili Powder
  • 2 tsp. Sumac
  • Harissa for Garnish
  • 4 Kebab Skewers

Direction

  • In a food processor, finely chop onion, ginger, garlic, cilantro, and jalapenos.
  • In a bowl, mix spice and onion mixture with ground duck. Mix in cumin, coriander, chili powder, and sumac.
  • Split mixture evenly into four balls. Take each duck ball and form it around the kebab. Let firm in the fridge for 30 minutes.
  • Grill on medium heat for 2 minutes on each side of until the meat thermometer reads 165 degrees.
  • Top with harissa for garnish.
