Duck Quesadilla

There is nothing better than cheese, beans and duck all seasoned with an array of spices melted together in a tasty tortilla! Top this classic recipe off with a cilantro lime crema drizzled on top. You can make this dish in about 30 minutes.

Ingredients

  • 12 oz. Ground Duck
  • ½ Cup onion, diced
  • 2 cloves garlic, minced
  • 1 tsp. salt
  • 2 tbsp. chili powder
  • 1 tbsp. cumin
  • ½ Cup refried beans
  • 2 large flour tortillas
  • 1 Cup chihuahua cheese
  • 3 tbsp. sour cream
  • 1 tbsp. lime juice
  • 1 tbsp. cilantro finely diced

Direction

  • Heat pan to medium high heat. Sauté ground duck with onion for 5 minutes. Add garlic and sauté for 1-2 minutes more.
  • Mix in salt, chili powder, and cumin. Add refried beans and mix well to combine. Let simmer for 5 minutes.
  • In a large pan, heat a spray of oil and add large tortilla. Add half the duck and bean mixture then top with half of the cheese. Fold quesadilla over and cook for about 3-5 minutes until cheese melts, flipping halfway through.
  • Mix sour cream, lime juice, cilantro, and a pinch of salt to make cilantro lime crema.
  • Cut up quesadilla into wedges and serve with cilantro lime crema drizzled on top.
