Ingredients
- 12 oz. Ground Duck
- ½ Cup onion, diced
- 2 cloves garlic, minced
- 1 tsp. salt
- 2 tbsp. chili powder
- 1 tbsp. cumin
- ½ Cup refried beans
- 2 large flour tortillas
- 1 Cup chihuahua cheese
- 3 tbsp. sour cream
- 1 tbsp. lime juice
- 1 tbsp. cilantro finely diced
Direction
- Heat pan to medium high heat. Sauté ground duck with onion for 5 minutes. Add garlic and sauté for 1-2 minutes more.
- Mix in salt, chili powder, and cumin. Add refried beans and mix well to combine. Let simmer for 5 minutes.
- In a large pan, heat a spray of oil and add large tortilla. Add half the duck and bean mixture then top with half of the cheese. Fold quesadilla over and cook for about 3-5 minutes until cheese melts, flipping halfway through.
- Mix sour cream, lime juice, cilantro, and a pinch of salt to make cilantro lime crema.
- Cut up quesadilla into wedges and serve with cilantro lime crema drizzled on top.
