Ingredients
Duck Sausage:
- 1 lb Maple Leaf Farms Ground Duck , thawed (Substitution: Swap out the Ground Duck Sausage meat with a fully cooked product shredded off the bone like Duck Leg Confit or Roast Half Duck )
- 2 Tbsp Onion, finely chopped
- 1/2 tsp Sage, ground
- 1/2 tsp Basil
- 1 tsp Salt
- 1/2 tsp Black Pepper
- 1/2 tsp Thyme
Bruschetta:
- 1/2 cup Olive Oil, divided
- 24 slices (1/4 inch thick) French Bread Baguette
- 1/4 cup Garlic, pureed
- 3/4 cup Feta Cheese, crumbled
- 1 jar (12 oz) Roasted Red Bell Peppers, drained and cut into thin strips
- 1 Tbsp Fresh Parsley, finely chopped
Direction
Duck Sausage:
- In deep bowl combine all ingredients until well blended.
- Cook sausage in a skillet over medium heat until just slightly browned; stir frequently to crumble. Remove from heat and set aside.
Bruschetta:
- Preheat oven to 400 degrees F.
- Brush 1/4 cup of the olive oil over bread slices; arrange in a single layer on cookie or baking sheets.
- Spread garlic puree over slices; top with cheese, bell pepper strips and sausage. Drizzle remaining 1/4 cup oil over bruschetta.
- Bake 6-8 minutes, or until hot.
- Garnish with parsley, serve and enjoy.
