- 1 Whole Duck, defrosted
- 2-3 Tbsp. Kosher Salt
- Fresh Cracked Pepper
- 2 Tbsp. Poultry Seasoning Blend

- Bring a large pot of water to a boil on the stove. Set up the grill for indirect grilling. Preheat the grill to medium-low.
- Remove defrosted duck from bag. Remove giblets and neck from cavity. Pat duck dry.
- Sprinkle the duck inside and outside generously with the salt, poultry seasoning, and fresh cracked pepper.
- Place the duck breast side up on the grill. Cover the grill and cook the duck for approximately 1 hour.
- Flip duck and cook for an additional 20-30 minutes or until internal temperature reaches 180 degrees F, measured at the thigh joint. Watch for flare ups.
- Transfer duck to a cutting board and let stand for 15 minutes.

- Once the water is boiling, place duck in boiling water and blanch for 3-5 minutes.
