Ingredients
- 1 5 lb. Whole Duck
- 2 Tbsp. Salt
- 1 tsp. Black Pepper
- 1 Tbsp. Smoked Paprika
- 4 Sprigs Thyme, Leaves stripped
- 2 Tbsp. Garlic, Minced
- 2 Sweet Potatoes, Chopped
- 8 oz. Brussel sprouts, Halved
- 1/2 Cup Pearl Onions
Direction
- Remove giblets and pat duck dry. Mix salt, pepper, paprika, thyme leaves, and garlic then rub inside and outside of duck with the mixture.
- Place rubbed duck, breast side up, into vessel on a grate and add a 1/2 cup water. Close lid and press poultry button and set timer for 35 minutes.
- After 35 minutes are up, add sweet potatoes, brussels, pearl onions or any other veggies you'd like on top and cook under pressure for 3 more minutes. Remove vegetables from pot, cover and set aside.
- Remove duck carefully, place under broiler for 5-10 minutes or until skin darkens and crispy.
