Ingredients
- 12 oz. Ground Duck
- 3 cups All-Purpose Flour
- 1 tsp Salt
- 1/2 cup Butter, Chilled
- 1 Egg
- 1/2 cup Ice Water
- 1 tbsp Lime Juice
- 1 Medium Onion, Finely Diced
- 6 Garlic Cloves, Minced
- 1 Poblano Pepper, Diced
- 1 tbsp Oil
- 1 tbsp Cumin
- 2 tbsp Chili Powder
- 1 Stock
- Crema
Direction
- In a large bowl, mix flour and salt. Add chilled butter and mix until crumbs form.
- Whisk the egg and cold water, and lime juice. Slowly add it into the flour mixture until a dough forms.
- Knead dough for 2-3 minutes then cover and refrigerate for 1 hour.
- Heat the oil in a large skillet on medium heat. Add the ground duck, onion, and poblano pepper and cook for 5-10 minutes until brown.
- Add garlic and cook until fragrant. Mix in cumin and chili powder. Cook for 2 more minutes.
- Stir in stock and bring to a boil. Reduce for 5 minutes.
- Preheat oven to 375 degrees F. Roll out dough into 4 inch round circles.
- Place a tablespoon of duck filling in each circle and fold the dough over. Press the edges to seal with a fork.
- Bake for 20-25 minutes until golden brown. Serve with crema.
