Poblano Duck Empanadas

Our ground duck is mixed with onion, poblano peppers and a variety of spices to make the filling for the empanadas. You'll then bake it for 20-25 minutes and get tasty Poblano Duck Empanadas.

Ingredients

  • 3 cups All-Purpose Flour
  • 1 tsp Salt
  • 1/2 cup Butter, Chilled
  • 1 Egg
  • 1/2 cup Ice Water
  • 1 tbsp Lime Juice
  • 1 Medium Onion, Finely Diced
  • 6 Garlic Cloves, Minced
  • 1 Poblano Pepper, Diced
  • 1 tbsp Oil
  • 1 tbsp Cumin
  • 2 tbsp Chili Powder
  • 1 Stock
  • Crema

Direction

  • In a large bowl, mix flour and salt. Add chilled butter and mix until crumbs form.
  • Whisk the egg and cold water, and lime juice. Slowly add it into the flour mixture until a dough forms.
  • Knead dough for 2-3 minutes then cover and refrigerate for 1 hour.
  • Heat the oil in a large skillet on medium heat. Add the ground duck, onion, and poblano pepper and cook for 5-10 minutes until brown.
  • Add garlic and cook until fragrant. Mix in cumin and chili powder. Cook for 2 more minutes.
  • Stir in stock and bring to a boil. Reduce for 5 minutes.
  • Preheat oven to 375 degrees F. Roll out dough into 4 inch round circles.
  • Place a tablespoon of duck filling in each circle and fold the dough over. Press the edges to seal with a fork.
  • Bake for 20-25 minutes until golden brown. Serve with crema.
