Ingredients
- 12 oz. Ground Duck
- 1 Tbsp. Duck Fat
- 1 Tbsp. Cumin
- 2 Tbsp. Chili Powder
- 2 White Onion, Thinly Sliced
- 2 Poblano, Thinly Sliced
- 4 Large Flour Tortillas
- 1 Cup Shredded Mexican Cheese Blend
Direction
- Melt duck fat in a pan on medium heat. Sauté onion and poblano slices for 5-7 minutes.
- In a separate pan, brown ground duck for 7-10 minutes. Add in chili powder and cumin halfway through.
- Lay tortilla on a cutting board. Take a knife and slice a cut from the middle of the tortilla to the edge.
- Place cooked ground duck in one quarter of the tortilla, sauteed onions in the next quarter, sauteed poblano peppers in the next quarter and ¼ cup shredded cheese in the final quarter.
- Carefully fold tortilla by quarter until you have formed a wedge.
- In a pan with a drizzle of duck fat, fry quesadilla until cheese is melted for about 3-5 minutes per side. Serve immediately.
