Root Beer Braised Duck Breast

Our premium duck breast is slowly braised in root beer, creating a rich, caramelized flavor and melt-in-your-mouth tenderness. An unforgettable twist on a classic product.

Ingredients

  • 4 Duck Breast, Defrosted
  • 2 cups Root Beer
  • 2 tbsp Kosher Salt
  • 1 tbsp Brown Sugar
  • 2 cloves Garlic, Smashed
  • ½ tsp Black Pepper

Direction

  • Score duck breast skin in 1/4" intervals, being careful not to cut into the breast meat. Rotate breast and score again, making a crisscross pattern.
  • Mix root beer with salt and sugar until dissolved. Add garlic and pepper into mixture. 
  • Submerge duck breasts into root beer marinade and let brine for 4 hours.
  • Set up grill for indirect heat. Preheat to medium high heat.
  • Remove duck breast from marinade and wipe excess marinade off. Place duck skin-side down in cast iron cook for 8-10 minutes until fat is rendered and skin is crispy.
  • Move duck breast to indirect heat on grill and cook duck skin side down for 3 minutes.
  • Flip breast over, grill for 5-7 minutes or until cooked to 165°F.
  • Place duck on cutting board and let rest 5 - 10 minutes.
  • Thinly sliced duck breast. Serve immediately with a cool glass of root beer on the side.
