South African Duck Casserole (Bobotie)

South Africa's national dish, Bobotie, takes on Duck! This delicious bake includes a sweet and savory mix of Ground Duck, onion, chutney, curry, and garlic topped with an egg and milk-soaked bread crust. Ingredients

  • 2 Tbsp Olive Oil
  • 2 Medium Onion, finely diced
  • 4 cloves Garlic, minced
  • 1 Tbsp Curry Powder
  • 1 tsp Cumin
  • 1 tsp Salt, Divided
  • 1 ½ cup Milk, divided
  • 2 Eggs
  • 3 Slices Thick Bread
  • 2 Tbsp Fruit Chutney
  • 1 tsp Apricot Jam
  • 3 Bay Leaves
  • Juice of 1 Lemon

Direction

  • Preheat oven to 350 degrees F. In a bowl, pour 1 cup milk over bread and let soak.
  • In a pan on medium heat, sauté onion in olive oil for 5 minutes.
  • Add in Ground Duck , Garlic, curry powder, cumin and ½ tsp salt. Cook until Duck is browned about 5-10 minutes. Remove from heat and place into casserole dish.
  • Remove bread from dish, squeezing out excess milk. Break bread into pieces and stir into meat mixture with chutney, apricot jam and lemon juice.
  • Combine strained and extra half cup milk then whisk with eggs and ½ tsp. salt. Pour mixture over meat and place bay leaves on top.
  • Bake for 45 minutes and serve.
