Cooking Instructions

  1. If frozen, thaw duck in refrigerator 36-48 hours.
  2. Strip off bag and remove neck and giblets from body cavity. Season to taste.
  3. Roast uncovered, breast up, on a rack in roasting pan 26 minutes per pound in preheated 375° F oven or until internal temperature reached 180 degrees F (82 degrees C), measured at the thigh joint.
  4. The legs move freely and juices run clear when the duck is done.
