Ingredients
- ½ Cup Honey
- Fresh Cracked Pepper
- 1 Whole Duck,Defrosted
- 2-3 tbsp. Kosher Salt
- 2 tbsp. Montreal Seasoning
- 1 Can of Beer
- 1 Garlic Clove,Smashed
- 1 tsp. Soy Sauce
Direction
- Set up grill for indirect grilling and preheat to medium low.
- Bring large pot of water to boil on stove.
- Remove defrosted duck from bag. Remove giblets and neck from cavity. Pat dry.
- Once water is boiling, add honey and stir. Place duck in boiling honey water and blanch for 3 to 5 minutes and then remove.
- Sprinkle top of duck with salt, Montreal seasoning, and pepper.
- Open beer can and pour out about ¼. Place garlic and soy sauce in can with beer.
- Place beer can in beer butt stand. Lower duck onto stand and carefully place on grill.
- Cover grill and cook duck for approximately 1½ hours at 375°F or until internal temperature reaches 180°F as measured at thigh joint.
- Transfer duck to a cutting board and let rest for 15 minutes. Remove beer can from stand and discard.
- Carve duck and serve.
