Deep Dish Duck Pizza

Chicago deep dish pizza with a duck twist! Our co-president, John Tucker, shares his recipe and tips on making this delicious Chicago authentic recipe with Duck Sausage made with our Ground Duck.

Ingredients

Duck Sausage:

  • ½ tsp. Ground Sage
  • ½ tsp. Oregano
  • ½ tsp. Rosemary
  • ¼ tsp. Chili Powder
  • ¼ tsp. Thyme
  • ¼ tsp Chili Flakes
  • ½ tsp. Salt
  • ¼ tsp. Pepper

Sauce & Cheese:

  • Red Pepper Flakes to Taste

Pizza Dough:

  • 1/2 tsp. Rapid Rise Yeast
  • 3 tsp. Sugar
  • 1 cup Warm Water
  • 4 cups All Purpose Flour
  • 1/4 cup Cornmeal
  • 1 tsp. Salt
  • 1 1/2 cups Warm Water
  • 1 tbsp Butter
  • 1/2 tbsp. Olive Oil
  • 4 tbsp. Vegetable Oil
  • 1 Sweet Onion,Diced
  • 3 Garlic Cloves,Minced
  • 2 tbsp. Olive Oil
  • 24 oz. San Marzano Tomatoes
  • 1 tsp. Salt
  • 3 tbsp. Red Wine Vinegar
  • 1/4 cup Sugar
  • 10 Slices Mozzarella
  • 1/4 cup Grated Parmesan

Direction

  • Whisk yeast, sugar, and warm water together. Let bloom until slightly risen, about 5-10 minutes.
  • Combine with remaining dough ingredients in mixer. Remove and knead a few times by hand to form into ball. Brush cake pan with olive oil and form dough to pan by pressing into bottom and up sides. Let rest while you make sauce and duck sausage.
  • Combine duck sausage ingredients. Place in sauté pan over medium heat and brown until crispy, about 10 to 15 minutes.
  • To make sauce, sauté onions and garlic in olive oil in large sauce pan on medium heat for about 5 minutes. Add tomatoes and mash with a potato masheruntil smooth.
  • Add red pepper flakes, salt, red wine vinegar, and sugar. Simmer for 10 minutes.
  • Assemble pizza by placing layer of mozzarella slices on dough. Top with duck sausage crumbles and sauce. Sprinkle with grated Parmesan.
  • Bake at 475°F for 20 minutes. Let cool for 10 minutes, then slice and serve.
