Ingredients
- 4 Duck Bacon Slices
- 1 Banana
- 2 cups plain Greek yogurt
- ½ cup peanut butter (xylitol free)
Direction
- Heat skillet over medium-high heat. Place a single layer of duck bacon in skillet. Cook 2-4 minutes per side. Remove bacon and let rest on paper towels.
- Chop Duck Bacon into crumbles. Divide in half.
- Mash banana with a fork.
- In a small bread pan, combine half of the duck bacon pieces with the mashed banana, the plain Greek yogurt, and the peanut butter. Mix well.
- Top with remaining duck bacon crumbles. Cover and freeze for at least 3 hours.
- Let ice cream soften for a few minutes. Scoop into a bowl and serve.
