Ingredients
- 8 tbsp. Duck Fat
- 1 lb. Morel mushrooms
- 1 cup Flour
- 2 tsp. Salt
- 1 tsp. Pepper
Direction
- Slice morel mushrooms in half lengthwise. Soak in cold salt water for 10–15 minutes.
- Dry in a salad spinner.
- Add flour to a plastic zip bag. Place morels in the bag and shake until well coated.
- Heat duck fat in a cast iron pan on medium high heat.
- Fry morel mushrooms in duck fat on both sides until crisp and brown for 5-10 minutes.
- Add salt and pepper to taste and serve once cooled for 2-3 minutes.
