Duck Fat Fried Morel Mushrooms

Ingredients

  • 8 tbsp. Duck Fat
  • 1 lb. Morel mushrooms
  • 1 cup Flour
  • 2 tsp. Salt
  • 1 tsp. Pepper

Direction

  • Slice morel mushrooms in half lengthwise. Soak in cold salt water for 10–15 minutes.
  • Dry in a salad spinner.
  • Add flour to a plastic zip bag. Place morels in the bag and shake until well coated.
  • Heat duck fat in a cast iron pan on medium high heat.
  • Fry morel mushrooms in duck fat on both sides until crisp and brown for 5-10 minutes.
  • Add salt and pepper to taste and serve once cooled for 2-3 minutes.
