Ingredients
- 1 lb Baby Potatoes
- 1 tsp Salt
- 1 tsp Paprika
- Chives for Garnish
- 3 Tbsp Duck Fat , Defrosted
- 1/2 tsp Pepper
- 1/3 Cup Grated Parmesan
- Sour Cream for Dipping
Direction
- Bake in oven for 20 minutes. Serve with chives for garnish and sour cream for dipping.
- Preheat oven to 415°F. Slice potatoes in half. Score potatoes in a crisscross pattern on freshly cut side.
- Melt duck fat. Mix in salt, pepper, and paprika. Spread 2 tbsp. of duck fat mixture evenly around a nonstick baking sheet.
- Mix Parmesan into duck fat mixture in bottom of pan until a paste forms.
- Place potatoes skin side up and brush skin side with remaining duck fat.
