Duck Fat Parmesan Potatoes

Imagine: Potatoes, Parmesan, Duck Fat, and just a hint of Paprika all baked in the oven to a perfect golden brown color! This recipe is great for a dinner appetizer and also a great party treat that will be gone before you know it!

Ingredients

  • 1 lb Baby Potatoes
  • 1 tsp Salt
  • 1 tsp Paprika
  • Chives for Garnish
  • 1/2 tsp Pepper
  • 1/3 Cup Grated Parmesan
  • Sour Cream for Dipping

Direction

  • Bake in oven for 20 minutes. Serve with chives for garnish and sour cream for dipping.
  • Preheat oven to 415°F. Slice potatoes in half. Score potatoes in a crisscross pattern on freshly cut side.
  • Melt duck fat. Mix in salt, pepper, and paprika. Spread 2 tbsp. of duck fat mixture evenly around a nonstick baking sheet.
  • Mix Parmesan into duck fat mixture in bottom of pan until a paste forms.
  • Place potatoes skin side up and brush skin side with remaining duck fat.
