Ingredients
- 12 oz. Ground Duck
- 2 Ears Sweet Corn,Husked
- 1 tsp Oil
- 2 tbsp. Chili Powder
- 1 tbsp. Cumin
- 4 Corn Tortillas
- ¼ cup Crema
- 1 tbsp. Lime Juice
- ¼ cup Cotija
- 2 Cloves Garlic,Minced
- 1 tsp Tajin
- 2 tbsp. Cilantro,Finely Chopped
- Salsa Verde for Garnish
Direction
- Preheat the griddle and grill to medium high heat.
- Lightly oil the sweet corn. Place it on the grill and cook for 10-12 minutes, turning frequently until charred.
- Mix ground duck with chili powder, cumin, and salt to taste. Form into 4 balls.
- Place the balls of duck meat on the griddle. Top each with a tortilla. Using a spatula or grill press, firmly smash the tacos down. Cook for 2-3 minutes.
- Flip the tacos and crisp on the other side for 1-2 more minutes. Remove from heat.
- Carefully cut the corn kernels off the corn cobs.
- In a bowl, mix corn, crema, cotija, lime juice, garlic, tajin, and cilantro to make street corn.
- Top the duck tacos with the street corn mix. Garnish with salsa Verde.
