Street Corn Duck Smash Tacos

Smashed Ground Duck meets grilled sweet corn, zesty crema & fresh herbs - layered on a warm tortilla for a bold, flavor-packed taco. A refined, yet street-style take on taco night.

Ingredients

  • 2 Ears Sweet Corn,Husked
  • 1 tsp Oil
  • 2 tbsp. Chili Powder
  • 1 tbsp. Cumin
  • 4 Corn Tortillas
  • ¼ cup Crema
  • 1 tbsp. Lime Juice
  • ¼ cup Cotija
  • 2 Cloves Garlic,Minced
  • 1 tsp Tajin
  • 2 tbsp. Cilantro,Finely Chopped
  • Salsa Verde for Garnish

Direction

  • Preheat the griddle and grill to medium high heat.
  • Lightly oil the sweet corn. Place it on the grill and cook for 10-12 minutes, turning frequently until charred.
  • Mix ground duck with chili powder, cumin, and salt to taste. Form into 4 balls.
  • Place the balls of duck meat on the griddle. Top each with a tortilla. Using a spatula or grill press, firmly smash the tacos down. Cook for 2-3 minutes.
  • Flip the tacos and crisp on the other side for 1-2 more minutes. Remove from heat.
  • Carefully cut the corn kernels off the corn cobs.
  • In a bowl, mix corn, crema, cotija, lime juice, garlic, tajin, and cilantro to make street corn.
  • Top the duck tacos with the street corn mix. Garnish with salsa Verde.
