Ingredients
- ¼ Cup and 2 tbsp. Duck Fat
- 4 Ears of Sweet Corn,Husked
- 1 Egg Yolk
- ½ tsp Dijon Mustard
- ½ tsp Lemon Juice
- 1 tsp Apple Cider Vinegar
- Salt to Taste
- ¼ Cup Sour Cream
- ½ Cup Cotija Cheese
- 1 tbsp. Tajin
- 2 Cloves Garlic,Minced
- 1 Lime
Direction
- Heat the grill to medium high heat. Brush corn with 2 tbsp. Duck Fat.
- Grill corn for 10-12 minutes until charred on all sides.
- Combine ¼ cup duck fat, egg yolk, lemon juice, apple cider vinegar, and salt to taste in a mason jar. Blend with an immersion blender to create duck fat mayonnaise.
- In a bowl, mix duck fat mayonnaise, sour cream, and minced garlic.
- Top the corn with sauce mixture. Sprinkle with cotija, tajin and fresh lime juice. Serve immediately.
