Duck Fat Sweet Corn Elote

We took street corn and gave it a decadent upgrade with Duck Fat. Brush your sweet corn with Duck Fat & grill it. Then mix Duck Fat with egg yolks, lemon juice, apple cider vinegar and salt to create a mouth-watering Duck Fat Mayonnaise. You'll top the sweet corn with the sauce mixture, cotija cheese, tajin and fresh lime juice!

Ingredients

  • 4 Ears of Sweet Corn,Husked
  • 1 Egg Yolk
  • ½ tsp Dijon Mustard
  • ½ tsp Lemon Juice
  • 1 tsp Apple Cider Vinegar
  • Salt to Taste
  • ¼ Cup Sour Cream
  • ½ Cup Cotija Cheese
  • 1 tbsp. Tajin
  • 2 Cloves Garlic,Minced
  • 1 Lime

Direction

  • Heat the grill to medium high heat. Brush corn with 2 tbsp. Duck Fat.
  • Grill corn for 10-12 minutes until charred on all sides.
  • Combine ¼ cup duck fat, egg yolk, lemon juice, apple cider vinegar, and salt to taste in a mason jar. Blend with an immersion blender to create duck fat mayonnaise.
  • In a bowl, mix duck fat mayonnaise, sour cream, and minced garlic.
  • Top the corn with sauce mixture. Sprinkle with cotija, tajin and fresh lime juice. Serve immediately.
