Ingredients
- 3-4 Cups Duck Fat
- 3 Sweet Potatoes
- ¼ Cup Corn Starch
- Water
- Salt and Pepper to Taste
- Optional: Goat Cheese and Thyme for garnish
Direction
- Peel sweet potatoes and cut into ¼ in” sticks.
- Soak sweet potato sticks in a large bowl of ice water for 30 minutes.
- In a large plastic bag, combine the cornstarch with 1/3 cup water. Mix well.
- Remove the sweet potato sticks from the water and place into the cornstarch bag then turn and shake to coat.
- In a large pot or Dutch oven, melt Duck Fat at medium-high heat and fry the sweet potatoes for 3 minutes.
- Remove and let set on paper towel to dry and cool for 3 minutes.
- Place in duck fat fry again for 7 min or until crispy brown.
- Toss with salt and pepper and serve. Optional: top with goat cheese crumbles and thyme.
Alternative Cooking Method - Air Fryer:
- Preheat the air fryer to 400°F. Arrange the fries in a single layer in the air fryer basket. Cook for 15-20 minutes or until golden and crispy.
