Ingredients
- ½ Cup Duck Fat
- 1 Cup Pumpkin Puree
- 1 egg
- 1 Cup Whole Wheat Flour
- ½ Cup rolled oats
- 1 tsp. baking powder
- 1 tsp. cinnamon
Direction
- Preheat oven to 350 degrees.
- In a mixing bowl, combine duck fat, pumpkin puree, and egg. In another mixing bowl, combine flour, oats, baking powder and cinnamon.
- Mix wet and dry ingredients together until combined.
- In a nonstick muffin pan, pour mixture into each cup about ¾ of the way full.
- Bake for 15-20 minutes. Allow to cool and serve.
