Ingredients
- 12 oz. Ground Duck
- 1/2 tsp Sage
- 1/2 tsp Basil
- 1/2 tsp Chili Powder
- 1/2 tsp Thyme
- 1/4 tsp Cayenne Pepper
- 1 tsp Salt
- 1/2 tsp Black Pepper
- ½ Medium Onion, Diced
- 2 Large Cloves Garlic, Minced
- 12 Large Jalapenos
- 8 oz. Cream Cheese
- 1 Cup Shredded Cheddar
- 12 slices Thick Cut Pork Bacon
- 1 tsp. Olive Oil
Direction
- Preheat oven to 425 degrees F. Slice jalapenos in half and deseed carefully.
- In a medium bowl, mix Ground Duck and spices to create duck sausage.
- Heat the olive oil on medium-high in a frying pan. Sauté onions for 2-3 minutes then add in duck sausage and garlic then brown for 5-7 minutes.
- In a large bowl, combine duck sausage and onion/garlic mix, cheddar cheese, and cream cheese.
- Stuff each jalapeno half with the duck and cheese mixture, then wrap each popper with ½ a slice of bacon (cut lengthwise).
- Bake in the oven for 20-25 minutes or until golden brown. Finish in the broiler for 2-3 minutes for extra crispy bacon.
